Great uncheese book

This book is wonderful, but be prepared to have carrageenan powder, xanthan gum (not guar gum), tapioca flour, and agar powder on hand. These recipes are time consuming, but delicious and you may not be able to start these right away unless you have most of these products. In addition, you may wish to make homemade rejuvelac and yogurt ahead of time.
Aside from this, the recipes are delicious and we have thoroughly enjoyed the ones we have tried. The sharp cheddar is very good and that is the one we started with. It takes more than the 3 to 5 minutes (at least it did for me) to cook til completion, but once it comes together, it is worth the effort. I'm determined to fix the mozzarella tonight for pizza. I'm sure it will be equally as good. If not, I'll be back to add to this review. It's a good book and a lot of work went into the creation of these wonderful recipes. Oh BTW, there are different kinds of carrageenan and you may wish to visit some of the resources that the author has listed in the back of the book. Amazon does not tell you the difference between the different varieties.

Worth the effort!

There are a few points I think it would be good for anyone considering this book to realize:

-This is not a recipe book. This is a cheese-making book with some recipes for how to use the cheeses at the end. The difference? Real cheeses are cultured and take time. The same is true of real dairy cheeses, which most of us have never tried making before. Many vegan cheezy recipes in other cookbooks try to use flavorings to make them taste like regular cheeses so they are made quickly. Except for a chapter of almost-instant cheeses, don’t expect to make your favorite cheese for dinner tonight. Understanding this will set the expectations for this book.

-Culturing will also lead to hits and misses as you learn how to do it. My previous experience with culturing before this was with sourdough, which has been invaluable when starting this book. The first few loaves of sourdough I made were bricks and tasted horrible. The ambient temperature, humidity, and the culture that you start with (the rejuvelac or yogurt for the cheeses) will all affect how your culturing goes. Do not tightly close the cultures. Living organisms release carbon dioxide just like we do, and your cheeses may expand in the container, and the pressure of the gas may even make the container break. If you are culturing a thick mixture and it never expands, you probably need to wait longer. I suspect some people who did not find the cheeses to be flavorful were not successful in their culturing. Live and learn.

-The ingredients are important and something that I think needed to be better emphasized in this book (and is emphasized well in The Nondairy Formulary). Only use uniodized salt, as iodine can prevent culturing. Only use filtered water, the chlorine from the tap can prevent culturing. To be safe, only soak the nuts with filtered water too. Rather than buying water, I keep a pitcher of water in the fridge. If it sits for a few days, the chlorine dissipates. For the yogurt, only use soymilk or almondmilk without additives (i.e. soybeans or almonds + water, nothing else), the additives can affect how your cultures proceed. Also, you are more likely to have success with the yogurt using soymilk (versus almond milk). Don’t use nuts that have been sitting around for a long time, if they don’t taste good raw, they won’t taste good in your cheese.

-If you have a nut allergy, do not buy this book. A better one for you would be the nondairy formulary. However, if you don’t have a nut allergy, I find Miyoko’s book to be superior and like that the nuts make the cheeses nutritious.

-If you go into drinking soymilk thinking that it’s going to be the exact same as dairy milk, you’ll be disappointed. But if you drink it thinking that it could be its own tasty beverage, then you can like it. Same for these cheeses. They are not going to fool anyone into thinking that they are dairy cheeses (unless they are a spread or sauce that is very strongly flavored). The texture is different and in some it is possible to notice a slight nutty taste (which I like). But they are tasty in their own right and do have flavors like the flavors of the dairy cheeses.

Other tips:

-It is possible to reduce to the time associated with these recipes by using store-bought yogurt and rejuvelac, and nut butters (look for raw or unroasted, as the roasting will change the flavors). However, I found the yogurt and rejuvelac with quinoa to be super easy and it keeps for awhile. I love this yogurt recipe so I don’t plan on buying store bought yogurt anymore. This yogurt is also clean eating (Versus store bought vegan, which usually has additives to firm it up more). If it is not thick enough for you, strain it in cheesecloth overnight and it will be Greek style (or what Miyoko calls yogurt cheese).

-It is possible to get away without a high speed blender if you have nut butters. Sprouts supermarket here carries store-made cashew butter, and Artisana brand is available at Whole Foods and on Amazon also carries it. Note that the nut butters themselves can be expensive, but it lets you get away without a blender that costs a lot more. For nut butters, replace 1 cup whole nuts with ½ cup nut butter.

-Don’t feel like you have to use cashews. I think the reason cashews are the preferred nut is because they blend the easiest. I find the cashews a little too sweet for some of the milder cheeses. I love using Macadamias in the yogurt (though they are even more expensive than cashews). A cheaper alternative is almonds, though you will probably need a high speed blender for this (unless, if anyone knows of a raw almond butter-do NOT use roasted! the flavor will be different). Brazil nuts may also work. Go for milder nuts if you experiment.

-I personally boil the nuts before using them in these recipes. A lot of my nuts come from bulk bins and I worry about insect larvae. I have found that boiling does not affect the recipe. Just don’t roast them. Nuts roast at a higher temperature and can alter the flavor quite a bit.

-It is possible to avoid using carrageenan if you are worried about it. Miyoko explains her use of carrageenan and that it helps the cheeses melt better. I have been using agar and it works alright. 1 Tbsp carrageenan = 2 Tbsp agar powder = 6 Tbsp agar flakes. I’d recommend the powder over the flakes if you don’t blend the flakes, the flakes do not always dissolved in thick solutions.

-I got this book for Christmas and so far have made rejuvelac, yogurt (twice, once with cashews and once with macadamias), cream cheese, yogurt cheese, sharp cheddar, meltable muenster, nut parmesan, and tofu ricotta. I have made cashew cream previously and it is a great base to sauces or desserts that you might otherwise use dairy cream for (but don't expect it to whip, use coconut cream for that). All have turned out well but again, don’t think it’s going to be exactly the same as their dairy counterparts. I currently have air dried parmesan in the works. I noticed that some other people have had issues with this and it does seem like the drying may be taking longer than the book suggests but I am optimistic. Tasting the mixture before it started air drying it already tasted amazing. Next up is camembert, gruyere, and provolone. Looking forward to trying all the cheeses in this book!

Fantastic!

I love to cook, and I have been a vegan for decades. This book is, hands down, the greatest surprise that I've had in the kitchen for a very long time. Wow! Where do I start? I made the rejuvelac, which is a necessary ingredient for many of the recipes, the day that I received the book. (I started it that day.) Super easy. I also made the yogurt immediately thereafter. Again, super easy. Very good results. As for the cheeses, I've made fresh mozzarella, sharp cheddar, basic cashew cheese, chevre, and marscapone so far. These are all very true to taste (yes, I remember the taste of dairy cheese), very easy, and really just in a league of their own. I should mention that I never buy "supermarket vegan cheese," as I do not care for the taste of any of the brands at all. The cheese made from the recipes in this book just knocked my socks off. My husband's too. Goodness! The book is simply fantastic. I can't wait for her next book.

The latest reason why I'm about to buy a segway...or a polar bear.

Okay, so let me begin by mentioning my age and my interest in reading this book. I'm 24 and about a year off from being the greatest elementary teacher the world has ever seen! This past year or so I've been reading books to stock my classroom library with for my students to read. Also, to note, I've just become an avid reader and the only books of interest at the moment are the ones I will one day have available for my students. Okay, now for the review.

I absolutely refuse to sugarcoat this review but this book was three parts incredible and twelve parts amazing. The characters were enjoyable, the writing was clever and comical, and the storyline was stellar. This was a book that anyone with a good sense of humor will enjoy at any age. One of the more cohesive aspects, to me, was the dialogue. I found it overwhelmingly believable, even if Timmy sometimes spoke to an intellectual level that would normally seem a little out of reach for his age--it was his character that made it believable and subsequently hilarious.

Even though the main rivalry in the book seems a bit one-sided, Timmy more than makes up for it by his most astute observations. He also makes up for the antics of his polar bear partner who seems to get in the way more often than he helps. Timmy Failure is quickly on his path to greatness, though he would probably argue he's already most of the way there.

In all honesty, this book made me laugh out loud on a consistent basis. I simply could not put it down. And it's because of all these reasons that Timmy Failure: Mistakes Were Made is the most exciting series I've ever cracked into and even though I do not know when book No. 2 will be written/made available to the general public, it will be all I desire until I can have it. As a future teacher, and hopefully a future parent, this book is not only great for entertaining children of all ages, it's also loaded with tremendous potential for engaging mini-lessons that students will enjoy doing!

It was clever and hilarious. My whole family read it and really enjoyed the book. It's for the young and old with a creative sense of humor. I bought the whole Timmy Failure series. We love Stephan Pastis.

An Amazing Debut Novel That's Perfect For All Ages

This is the debut novel from Stephan Pastis, creator of the amazing comic strip Pearls Before Swine. While his comic might not be all ages material this book sure is. The characters are fun and well written with an engaging plot. Timmy Failure ( yes that's his name) is an ambitious boy who wants to run a detective agency to get money to help his mother but has competition from his rivals ( and other reasons). He gets some help from his partner, a polar bear named Total in forming Total Failure. With a name like that what can go wrong?

From the very first line the book draws you in and makes you fall in love with its universe and the writing only gets stronger from there. This has been described as the next diary of a wimpy kid and as a cross between diary and calvin and hobbes and the influence of the latter on Pastis is undeniable as seen in the protagonist, who has many qualities shared by Calvin ( He has noted the influence himself several times in the past). Personally I think the book is its own thing and can stand on its own merits.

While there are quite a few plot threads that seem to get dropped without much explanation, readers will still be satisfied. While this is a kids book officially, it is really for all ages as adults will appreciate some parts that kids might not.

Timmy is a protagonist who is an outsider of sorts but comments on the adult world in a way that anyone who is frustrated can relate to. The unreliable narrator in fiction is not always done well but Pastis nails it here.

All in all a great novel for kids nine and up and for adults and teens as well.

Magic! Just Magic! Read it Again & Again !

A Delightfully re-Illustrated Classic!

I found this to be a beautifully illustrated update to a classic. The colors and images are fresh and vibrant, and very invigorating to read for the child, as I read to my 3 year old niece, her eyes filled with wonderment at the lovely illustrations.

The story is also very engaging and easy to read, I felt the author did very well condensing-down the whole length of this masterpiece to just the right length, Definitely one for the roster!

The Cowardly Lion in this rendition was sooo cute! I wish I could just reach into the book and hold his tail! Aawh!!!
The famous winged monkeys expressions really made me laugh, but made my 3-year old niece very very mad!, she threw her arms up in disapproval! (Awh!!) you should have seen her when they arrived! lol ~Get it! you'll see what I mean lolz!

It was a joy to both read and look at, and I hope the author does many more!

too cute and the pics are excellent

Sometimes I am really glad that I am a speed reader. It allows me to dive into really great books and this is a really great book with illustrations that are simply delightful. I grew up watching the Wizard of Oz maybe a billion times and each time I enjoyed it more and more. I think this book is one you will be using often to entertain your kids. Kudos to the author.

Tiny Board Book Spanish Version of Goodnight Moon

I was putting together a tri-lingual set of Goodnight Moon for a tri-lingual family's children, so I was happy to find this. The only disappointment is that each language version is a different size. Buenas Noches, Luna is the smallest. It's also a board book, with hard pages, unlike the others. Now I wonder if it comes in a regular hard cover but paper pages version. The description didn't tell me that. For most people it probably doesn't matter.

Like it or not, Oahu Revealed cuts to the quick

Travel books are probably a blast to research and write, but after they go to press, the authors probably start preparing for a different kind of "blast," as in the "what planet did you come from that you rated my favorite restaurant as a dive!" kind.

Oahu Revealed is blisteringly candid. You want a travel guide that sings praises everywhere and for everything? Find yourself another book. However, if you want to be prepared for the lines at Hanauma Bay, want to know what "ocean view" means in a hotel two blocks from the beach, want to know whether the Polynesian Cultural Village is a rip-off or entertaining, and how many speed bumps you have to drive over to visit the Pu'u O Mahuka Heiau near Pupukea, then this is the book. It is refreshingly honest, candid, funny, interesting, and educational. I found myself agreeing with the author's comments far more than I disagreed. And yes, there were times I disagreed. I like the folk at North Shore Diving (now Deep Ecology). And I'm queazy about encouraging beginners to rent a kayak and just start paddling offshore. But if this book mirrored my mind, then I would have written it!

Here's a warning, however. There are many folk on Oahu who are upset with this book, and it is not just from getting more visitors into personal favorite places. It also involves having more visitors actually affecting the nature of places, with added trash, human waste, trespassing, and trampling. Ask a local, and know before you go. Don't trash Oahu, please!

My Favorite Oahu Guidebook

There are many guidebooks available for Hawaii in general and Oahu specifically, but this one is by far the best. Not only is the book extremely current (it posts a 2005 copyright date), but the layout is easy to use, and it provides information that is actually useful in both planning a trip and once on the island.

The book is well written, and is especially strong in the section on lodging. Without question the coverage of hotels in this book is superior to any other guide. The restaurant information is also informative, much better than other guides, but remember that no book can completely cover all the restaurants on the island. I have been to many of the places detailed in the book, and generally agree with the appraisals of the authors (the one exception being that I thought the Honolulu zoo was substantially better than the authors did). Even if you don't completely agree with every opinion offered in the book, every claim is well reasoned and nothing is completely out to lunch.

This is the gold standard for Hawaii guidebooks, and I recommend it highly to anyone visiting Oahu!

Andrew Doughty gave fantastic insight and valuable information is his books titled Maui Revealed and Kauaui Revealed but he was restricted to certain revelations in this book. However, the book is still a helpful map and detailed reference to navigating through a vacation to the Hawaiian Islands. He shares so many awestruck hikes and lists all Oahu has to offer. This book is awesome for planning your Hawaiian adventure.

A bad book for all the wrong reasons.

I really wish this were a good book, because the basic idea behind it is original, important and clever. That makes Taleb's careless handling of his topic all the more disturbing.

The rock-solid foundation of this book is Taleb's insight that the most important events in history, and presumably to come in the future, are essentially unpredictable; they can't be forecast using the information we have prior to their occurrence. That's a huge point and Taleb goes on to offer some compelling evidence that it is indeed true. He uses the analogy of a Turkey deciding that humans must have his best interests at heart because they show up every day of his life to feed him a good meal, he projects that - based on all of his evidence - this will continue. This works great until a couple of days before Thanksgiving. Suddenly his predictions have failed him catastrophically.

Great idea, and - I believe - true. But Taleb undercuts his own thought baby with shoddy writing, poor research and personal opinion masquerading as evidence.

The writing: A well-written book allows a reader to flow naturally from one paragraph to the next and from one idea to the next, even when the subject matter is complex. Taleb's writing is tough to follow and slow to get through. Beyond that, you really struggle to comprehend what he is trying to get across to you for huge portions of this book.

The research: When Taleb used examples to back his ideas that came from fields with which I was unfamiliar, I felt pretty good about them. However, whenever he used examples from areas where I have deeper knowledge, I noticed that his knowledge was lacking badly (being a trader comes to mind). This started to make me question all of his supporting evidence.

The opinion: Taleb leans heavily on the idea that most of what happens in the world is luck, even when we try desperately to ascribe some sort of tangible cause to it. At one point he uses the example of Mac operating software being far superior to that of Windows, but Windows being dominant in the market. He chalks it up entirely to luck! I'm sure he'd say I'm falling prey to a logical fallacy, but Apple and Steve Jobs had a huge head start on Microsoft, but refused to let anyone else run their operating system - so to run it, you had to buy a Mac. Microsoft let anyone run their operating system and consequently took the dominant share of the market.

This book is really a shame. The idea is just too good to be used this poorly. It made me sad to read this thing. Taleb the thinker deserved a far better writer than Taleb the author. What a waste.

You might still try reading this to understand Taleb's idea, because it's a huge insight, but watch all of his other content because it's riddled with holes.

Disappointing, Underwhelming

After reading "Fooled By Randomness", I eagerly looked forward to reading Taleb's latest book, only to be disappointed. He mentions both in the prologue and acknowledgments, "the book just wrote itself", and it shows. He could have fitted most of the 300 pages into 50 and gotten his points across. In any event, this book does not add anything more to "Fooled By Randomness" (194 pages) and is often rambling and incoherent. Perhaps if one read The Black Swan first, it may have been interesting but not if you read Taleb's previous excellent book.

The Black Swan

My son recommended reading The Black Swan to me. I had no idea what it was about or I likely would not have read a "financial book". I am an artist and tend to avoid this type of reading.
Coincidentally, I had just had a negative experience with a financial adviser and found the timing for this book perfect. The Black Swan is an occurrence that has great impact and is unforeseen. It is often what determines the success or failure of the quality of your financial life. That pretty much describes anything in the area of finances that matter.
The book is interesting, but more importantly funny, and easy to read. It is not your typical "how to" financial book. Just the opposite, it is a why you should stay away from a financial adviser... book. I learned a great deal and really look at the world of finances and the world in general in a different and a more positive way. This is a great book and I highly recommend it.
